Fuji Bakery Owner Akihiro Nakamura Seeks Perfection in Chaos

SW: How would you define Japanese baking for those who aren’t familiar with that style?

We don’t have traditional Japanese baking. Baking came to Japan from Portugal first, and after we opened up the country, it started coming from everywhere. It was a kind of a chaos in Japan when everything came all at once. Of course, we love it, and we like to have the traditional influences from each country, and also to have our own flavors.

Perfection is something we Japanese usually go after. Also, the Japanese went to many countries to study true baking techniques. That’s why we have the Italian breads, French breads, danishes from Denmark, and Russian style breads like piroshkis. People call us a Japanese-French bakery, but it’s not. We call this a Japanese bakery, which is chaos.

Today was the warmest April 8 ever recorded in Seattle, reaching 70 degrees at both Seattle-Tacoma International Airport and the National Weather Service at Seattle’s Magnuson Park.

I have a Nikon 50mm F1.2 AIS lens, it is manual focus with superb built. But I have seldom used it in the past simply due to the fact it is difficult to focus using cameras with small viewfinders. The D800 changed all that. The result is simply magical. It has that certain bokeh and lightness that helps capture more of a “dreamy” look.

The trick with Aaron, which I think makes this the ultimate challenge is that you have to learn a Broadway play every week. We’re not walking around the corner holding a gun, going, ‘Look out!’ We’re coming around the corner and doing Sorkin, and that’s a whole other thing. And it’s Sorkin at 90 miles an hour, because there’s a musicality, there’s a rhythm to him. Dialogue that has to come out of your mouth, snap-snap—and not just actors talking fast. These [characters] are very smart people, they think fast and they talk fast, and those listening have to keep up.
